inroducing buckwheat dinner crepes

Lunch and dinner Chez Ellen was buckwheat crepes and boy were they delicious! The buckwheat flavor is hearty without being overpowering like bread that tastes too healthy. They have body and texture and still that soft eggy crepe lightness and sponginess. Tortillas can't touch this.

Approved for menu:
cheddar/jack/ham/spinach
parmesan/jack/mushrooms/spinach

Anything that suits a panini sandwich is going to go great in these--like pesto and dijon.
